Can Vegetarians Eat Animal Crackers?
Old joke, true, but there are several points to consider.

On the serious side, you need to look at the ingredients to make sure there are no animal fats used. If the ingredients are of vegetable origin, you are good to go.  If not, you will have to find another brand that fits the bill.

If even the representation of an animal offends your sensibilities, then it matters not what the ingredients are and again you are good to go!

For diabetics, animal crackers are a discrete way to figure your carbs. I don't mean 'discrete' as "sly and surreptitious". I mean as an easily measurable way to get to a desired serving size for blood sugar control.  You can easily add or subtract a cookie to get to the 15 gram portion that qualifies as a 'serving'.

Historically, food historians have concluded that Medieval Germans made the first animal-shaped cookies for Christmas. They decorated them with icing and often hung them as ornaments. The cookies lasted a long time with the nutrition easily portable and storable.

You can make your own animal crackers and they'll be more nutritious than storebought because you won't need to add the undesirable food colorings and preservatives. AND, if you do object to the idea of the 'animal' in animal crackers, you can cut them into non-animal shapes! That way you can have your *cracker and eat 'em too!

And finally, a quote posted on diabetic-recipes.com:

Animal crackers, and cocoa to drink,
That, is the finest of suppers, I think;
When I'm grown up and can have what I please,
I think I shall always insist upon these.
