How about an anecdotal story--one impressive enough to make the University of Chicago Medical Center begin studying celery, celery seed and celery extract!?
Once upon a time, a researcher's Dad ate a quarter pound of celery a day for a week. It was the only alteration to his diet since his last physical and the results were astonishing. He took his own blood pressure daily and noticed a marked change. It went from 158/96 to 118/82! Now this is not celery extract, which is produced from celery seeds, but unless you build an allergic intolerance to celery, you're still getting quite a wallop of 3nB.
After a bit of study, the researchers discovered that a tiny amount of the active compound in celery--our unimpressive 3nB--not only lowered blood pressure 12-14%, but it also lowered cholesterol roughly 7%! So if you are interested in trying a natural method for blood pressure and cholesterol lowering, you can go to your local vitamin store and get celery extract pills standardized to contain 85% 3nB and other celery phthalides at a dosage of 75 to 150 mg twice daily -- or eat 8 ribs of celery per day!

CELERY SOUP
2 potatoes, cut into very small pieces
1 bunch celery, chopped
1 small onion, chopped
2 T butter (or your favorite fat/oil)
1 T curry powder
1 T fresh ginger, cubed
1 t cayenne pepper
1 chili pepper
1 1/2 quart vegetable broth
salt and pepper, to taste
lemon juice
Sauté the onion and potatoes in the butter/oil; add the seasonings. Stir well; add celery and broth. Season with salt and pepper and simmer for 30 minutes. You may leave the vegetables chunky or puree everything in a food processor, and season with lemon juice. Serve warm.
VEGAN POTATO SALAD
3/4 C chopped scallions
1/2 C chopped celery
1/4 C pickle relish
1/4 C lemon juice
1 T salt
1/2 t dry mustard
1/4 t pepper
4 lbs potatoes, boiled in skins, peeled and cubed
2 C Vegenaise or any other vegan mayonnaise
Stir together: lemon juice, salt, dry mustard and pepper. Toss with hot cubed potatoes to coat evenly. Stir in remaining ingredients: scallions, celery, Vegenaise and pickle relish. Chill for several hours.
