Here is an easy way to get fresh coconut out of the shell and the rind!
First, take a wine corkscrew and find 'the easy eye' on the coconut. There are three eyes on every coconut, but only one gives you easy access -- no, I don't know why, but 'tis true. Stick the corkscrew into it, screw it in until it pops through to the liquid inside the coconut, which is known as coconut water. Most of us thought that this internal liquid was the 'milk', but actually, coconut milk requires that you squeeze the coconut fiber -- it is those liquid squeezings that are true 'coconut milk'!
Drain the water, chill it and drink it! You can drink coconut water either by itself or mixed in with another juice. It is very nutritious, non-calorically fattening and carries a glycemic load of 3! It nutritionally provides, per cup, 6% RDA calcium, 10% vitamin C, 4% iron and 11% dietary fiber!
Coconut milk is different from the liquid inside the floating coconut. It is taken from pressure-squeezing the coconut flesh. Secondarily, a thicker coconut milk comes from shredding the coconut meat, soaking it in HOT water and then pressing it through cheesecloth.
All coconut fluids are high in fat content, but there are many benefits associated with all of these liquids. A cup of thick coconut milk contains 500 calories. Coconut milk also is high in saturated fat, but just as with other fats, use them periodically and they will bring you more positives than negatives.
There are studies underway about antiviral and anti-HIV properties of coconut and it's milk. Watch for further studies about this and do NOT run solely on these 'possibles' for your health practices. However, Hawaiians eat a lot of coconut and its products and have very few heart problems. They also have amazingly wrinkle-free faces -- so does that mean coconuts will help us all stay young looking? hmmm ... Time will tell.
I haveth digressethed! Then take the liquid-absent coconut and put it in a 400 degree F. oven on a pie plate. Cook for 20 minutes and then remove and cool. Stick it in a plastic bag and whack it against the concrete on your sidewalk or home stairs. It will break the hard shell and may even come out whole white meat!
Cool in the refrigerator and eat as a wonderful snack. If you wish freshly shaved coconut, just grate it after it is cooled and you have a wondrous topping for jellos or cupcakes.
And if you love German Chocolate cake or cupcakes, even if you start with a packaged mix, add some freshly shaved coconut to the mix or sprinkle on top of the pre-baked cupcakes, and you have an exquisite outcome. Should your coconut meat not come out clean, but with a 'skin', suggestions range from using a paring knife to a shredder.
I've occasionally overbaked my coconuts and have had the 'skin' come off along with the external husk. I think I overbaked by about 7 minutes -- give it a try?! Let us know what you discover.
