It won't come as a surprise that granola is one treat that vegetarians can comfortably consume.
Good for you, as long as you don't go overboard on the honey, and useable as a snack or a meal.
Debbie Chronister of The Village, OK, has developed a homemade granola that she then uses for lunch with a yogurt topper. If you add some strawberries or peaches to your yogurt and granola combo, the result is a wonderful parfait.
Here is her recipe. We thank her for her permission to use it on our site.
Debbie's Granola
2 C oatmeal
1 C almonds
1/2 C sunflower seeds
1/2 C honey
1/2 C dried (unsweetened) coconut
1/4 C vegetable oil of choice
1/2 C golden raisins (add these after you bake the other ingredients)
Mix everything except raisins together. Place on a cookie sheet or 9 x 12 x 2 inch pan. Put in 350 degree oven and bake for 30-45 minutes, Stir every 10-15 minutes to prevent sticking or burning. Cool 10 minutes and then stir in raisins.
Cool completely and then store in an airtight container.
