Iceberg Lettuce: A Good Veggie
Do you love iceberg lettuce and have to sneak it into your grocery basket,
trying to hide it among other items, so no one will know you are buying a
product reputed as to having no redeeming nutritional value?

Come on out of the Iceberg Lettuce Closet and rejoice in the fact that it
actually does have many healthy benefits in addition to that delicious crisp
and crunchy texture that you and I do so enjoy!

Iceberg lettuce may not be richest source of nutrients and micro nutrients,
like spinach, but it still packs a respectable amount of nourishment and
vitamins.

One cup of iceberg lettuce, let us <smile> say eight or nine large leaves,
provides about 25 percent of the average daily requirement of Vitamin K, 8
percent of Vitamin A and folate, 6 percent. In addition, iceberg lettuce has
average amounts of antioxidants, fiber and omega-3 fats. Not bad for this much
maligned vegetable.

Even though iceberg lettuce is about 95 percent water, it does provide bulk
which may help in reducing the hunger pangs of those people watching their
diet. Don
't forget the nutrients it supplies. This is not an "empty"
food.

Always choose the head of lettuce with the greenest leaves. Remember, the
darker the green of any leafy vegetable, the more phyto-chemicals it provides
you. When you are selecting that head of iceberg lettuce, in addition to the
color, find the one that is the lightest in weight for its size. The heavier
heads of lettuce usually have fewer leaves and a large core.

I hope that you are now ready to openly enjoy that salad or sandwich
containing iceberg lettuce and that you can and will be ready to defend it
from those who, not knowing its nutritional value, would deny you this
delightful vegetable.
