Impossible Pumpkin Pie
2 eggs
3/4 cup sugar (or, for diabetics: 1/4 cup DiabetiSweet)
1-1/2 cup soy milk (Silk unsweetened)
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1/2 teaspoon ginger
1 teaspoon cinnamon
1-1/2 cup pumpkin, canned or well-packed fresh cooked
1/2 cup Bisquick
Blend all ingredients 1 minute in a blender or beat 2 minutes with a mixmaster. Pour into 9 inch pie plate. Bake at 350 degrees for 50-60 minutes until golden brown and knife inserted in center comes out clean. Let cool 15 minutes. Refrigerate remainder.
