A very good Vegan Dessert is rice pudding. Rice pudding is a yummy treat that many of us remember from our childhood. Of course we didn't realize then that we were eating something packed with minerals, B and E vitamins and that all important fiber.
This is a very simple recipe for making rice pudding. Whenever you're planning to have a rice dish for dinner, just make several extra cups of rice. It will keep for a couple of days in the refrigerator if you don't want to make this vegan dessert right away.
This is an easy recipe to adjust to your needs. For each cup of cooked rice, use ½ cup of soy milk. I usually make enough rice to have two extra cups left over for making a vegan dessert. Add one cup of soy milk to the rice in a saucepan. Stir the rice and soy milk over medium heat until it just begins to boil. Immediately reduce the heat as low as you can and let the rice and milk gently cook until the milk is absorbed into the rice. It usually takes about fifteen or twenty minutes for the rice to absorb the soy milk.
As soon as the soy milk has been absorbed, remove the saucepan from the heat and stir in a pinch of salt, ½ tsp. each of vanilla and cinnamon, ¼ tsp. of nutmeg and ½ cup of raisins. Stir and toss the mixture for this vegan dessert until it's well mixed. I spoon the mixture into pudding cups and top with a generous amount of raw sugar or maple syrup. Either topping tastes great on the pudding.
