Banana cake recipe

















MOIST AND NUTTY BANANA CAKE RECIPE
2/3 c. shortening
2-1/2 c. sifted cake flour
1 2/3 c. sugar
1 ¾ t. baking powder
1 t. soda
1 t. salt
1 ¼ c. ripe bananas well mashed
1/4 c. applesauce
2/3 c. buttermilk (organic)
2/3 c. broken walnut or pecan meats

Lightly beat the shortening on low speed to soften. Sift in dry ingredients. Add bananas and ½ the buttermilk; mix well until all flour is moist. Then beat on high speed for 2 minutes.
Add remaining buttermilk and the applesauce; beat 2 minutes longer. Fold in nutmeats. Bake in 2 greased and floured 9-inch round cake pans at 350 degrees 30 to 35 minutes.
Test banana cake recipe for doneness.

Icing this banana cake recipe is optional. Here are some suggestions:

Place a lace-paper doily on top of the cooled cake and dust with confectioners' sugar. Remove the doily leaving the lacy sugar pattern.

Banana-lemon frosting for a banana cake recipe
¼ c. butter substitute
1 c. sugar
1 T. lemon juice
3 t. mashed banana
Cream together all ingredients until of spreading consistency. Will frost tops and sides of two 8-inch layers.
