Organic bread dough
The only way you get organic bread dough is by first buying organic flours. Then you are on your way to producing a pesticide- and fungicide-free loaf of bread.
For those who do not know the difference between organic bread dough and conventional bread doughs, the very first step is the grain grower. The strain of seed grain used must not have been genetically altered, nor can it be from plants that were ever grown with chemical sprays during its leafing cycle.
Not only that, but even the soil must be certified as free of chemical additives. If the farmer grew the grain in soil treated with chemicals and poisons to help increase the crop size and not be bothered by bugs and funguses, he could not claim his products are organic and you'd never get organic bread dough from his land.
Who certifies that the land passes muster and qualifies as 'organically pure'? In the U.K., the Soil Association will come out and inspect the land, the crop records and provide certification if all meets the standard criteria correctly. In the U.S., the Organic Consumers Association is one group that does that job. Other countries, no doubt, have their own organizations, but there is no worldwide group other than mutual kinship of ideals.
What is desirable and allowed is natural rotation of crops and co-planting of naturally dissuading plants alongside grain crops. In our backyard gardens, the use of marigolds will discourage caterpillars on the tomato crop. Similarly, other plants may be used to aid in bug- and fungus-free grain growth and there is a very limited list of natural compounds that can be used in pest control. It takes a lot to get organic bread dough on your table!

In the U.S., there are many companies who have achieved certification by the USDA as 'organic' growers in the National Organic Program. Some say this is not a strict enough 'seal of true organics' and choose a stricter code of their own. At least it is a start and the 'organic craze', if that's what it is, appears to be building a head of steam.
