Carrot Cake Recipe
A delicious carrot cake recipe to try is one that not only has carrots, but apples and pineapple and pecans.
For this carrot cake recipe you will need the following ingredients:
3 c. of flour
2 c. of sugar
1 tsp. soda
½ tsp. salt
2 tsp. cinnamon
3 eggs
1 ½ c. vegetable oil
1 tsp. vanilla extract
1 c. pineapple, crushed and drained
¼ c. apple, peeled and grated
1 ¾ c. finely grated carrots
1 c. pecans, broken into pieces
Combine all dry ingredients for this carrot cake recipe in a mixing bowl.
In a large mixing bowl, put the eggs, vanilla and vegetable oil together and beat well.
To this mixture, add the pineapple, apple and carrots and thoroughly mix. Then stir in the dry ingredients and the pecans.
Bake this carrot cake recipe in a 9 x 13 inch pan for approximately 25 minutes at 350 degrees F.
You may use icing on this carrot cake recipe or serve plain.

½ tsp. nutmeg
1 tsp. cinnamon
2 c. sugar
1 ¼ c. vegetable oil
4 eggs
2 c. carrots, finely shredded
¾ c. pineapple, crushed and drained
½ c. flaked coconut
1 c. walnuts or pecans, broken into pieces
Sift together all the dry ingredients except the sugar for this carrot cake recipe.
Ina large mixing bowl, begin to beat the eggs and gradually add in the sugar until the mixture is well blended. Using a spatula, add the oil to the sugar and eggs and then gradually add the dry ingredients. Then add the carrots, pineapple, coconut and nutmeats, mixing well.
Pour the batter for this carrot cake recipe into a greased and floured 9x13 pan and bake at 350 degrees F. for 30 to 40 minutes. Always check for doneness with the old toothpick trick since stove temperatures do vary. Allow the cake to cool at least 10 minutes before removing it from the pan.
This carrot cake recipe can be frosted or simply served plain.
