Strawberry pie recipe
Here are strawberry pie recipes that guarantee you will never hear the phrase: "I've got no room left for pie!" The rhubarb and strawberry pie recipe should insure that all present would let the old belt out, just one more notch.
Rhubarb-Strawberry Pie Recipe
1 C. sugar
2 T. quick-cooking tapioca
¼ tsp. salt
¼ tsp. nutmeg
¼ C. orange juice
3 C. cut rhubarb
1 C. sliced strawberries
1 T. butter (or substitute)
1 pie shell (unbaked)
Combine the sugar, tapioca, salt, nutmeg, orange juice and rhubarb. Then pour into the unbaked pie shell. Top with the strawberries and dot with butter (substitute). Add a top crust or, with cookie cutters, make cutouts from the pastry and place on top of the pie. Bake in 400 degree F. oven 40 to 50 minutes.
The Best-Ever Strawberry Pie Recipe
3 C. crushed strawberries
3 C. sliced strawberries
1 C. sugar
2 ½ T. quick-cooking tapioca
1 ½ T. cornstarch
1/3 C. water
1 tsp. lemon juice
Pastry for a 9'' double crust pie
In a saucepan, combine sugar, tapioca, cornstarch, water and crushed strawberries. Heat rapidly, stirring constantly, until mixture thickens. It is not necessary to boil the mixture for this strawberry pie recipe. When mixture has thickened, set it aside to cool.
Line the pie pan with pastry. Add sliced strawberries and lemon juice to the thickened, cooled mixture and stir to combine the berries with the filling.
Pour the filling into the pie shell. Cut slits in the top pastry; cover the pie and pinch around the edges to seal the top and bottom crusts.
Bake at 425 degrees F. for 30 minutes, or until crust is browned.
Banana-Strawberry Pie Recipe
½ pound strawberries (if frozen, thaw before using)
1 C. sugar
2 T. cornstarch
¼ C. butter substitute
1 C. powdered sugar
2 tsp. dried egg whites
2 T. coconut milk
2 large bananas
1 pie crust made from crushed dark chocolate cookies. (Oreo prepared pie crust)
In a saucepan, combine sugar and cornstarch. Add strawberries and stir over low heat until the sauce has thickened. Set aside to cool.
With electric mixer, cream together softened butter substitute and powdered sugar. Then add the dried egg whites that have been well mixed with the coconut milk. Beat until it is the consistency of icing.
Cover the bottom of the chocolate pie crust with the icing mixture.
Cover the icing layer with a generous amount of sliced bananas.
Cover the bananas with the cooled strawberry mixture.
Refrigerate for several hours before serving.
