Strawberry shortcake

















Strawberry shortcake recipes are very basic and simple. You probably have your own favorite strawberry shortcake recipe. But if there is someone, somewhere, who has never made strawberry shortcake, here are a few guidelines.

No claim is made that there is some new and different way to be found in making strawberry shortcake. Strawberries and shortcake have been together for hundreds of years. It is entirely possible that some similar combination has been eaten and enjoyed for far longer than just a few hundred years.

The first step in making strawberry shortcake is to wash the berries. Even if they came from your garden, they are going to be a little dusty. And in this day and age, when we get produce that has been shipped in from distant places, careful washing of all fruits and vegetables is the sensible thing to do.

As soon as you have washed the berries you plan to use in your strawberry shortcake recipe, you need to remove any leaves and the hull, which is the greenish-white top of the strawberry. It is your choice to leave the berries whole, to slice them, or do some of both. 

A quart of strawberries is usually mixed with a cup of sugar. The mixture will need to stand awhile so the berry juice can combine with the sugar. This is what makes the syrup to go along with the berries that will go on the strawberry shortcake.

Shortcake, for strawberry shortcake, is a biscuit made with flour, soda, salt, baking powder, milk and shortening. The shortening is cut into the dry ingredients until it's crumbly. Then the milk, sweet or buttermilk, is added and blended into the dry ingredients. The batter can be rolled out and cut into rounds, or dropped by the spoonful onto the baking sheet. 

There are strawberry shortcake recipes that use angel food cake, sponge cake or pound cake instead of the traditional shortcake. Not true strawberry shortcake, but no less delicious.

There are strawberry shortcake recipes that call for whipped cream on top of the strawberry shortcake. Some strawberry shortcake recipes add Grand Marnier to the strawberries. Of course, you are free to try any variation that sounds good to you.

But when it comes to plain, old-fashioned eating, a big hot buttermilk biscuit, topped with strawberries and lots of juice to soak into the shortcake, may be the best strawberry shortcake you ever eat.
