Peach cobbler recipe

















We have found a really superior and EASY peach cobbler recipe for you! Every fruit is delectable if you get a good crop. Cherries, apricots, nectarines, pears -- you name it. Peaches are no different. If you get a wonderful peach crop delivered to your grocery store or can buy from a local grower, they are like liquid gold.

But if it is a really garbage year for peaches, they'll be mealy and tasteless. When this happens and you still want a decent peach cobbler try this one and use canned peaches!

PEACH COBBLER

4 cups sliced peaches
1 T. lemon juice
3/4 cup sugar
1 T. corn starch
2 cups biscuit mix
3 T. butter or margarine, melted
1/2 cup milk
1 tsp. almond extract
1/2 T. sugar
1/8 tsp. ground nutmeg

Preheat oven to 400 degrees. Combine peaches, lemon juice, sugar and cornstarch in a saucepan. Heat and stir until boiling and thickened. Pour into an 8" square baking dish. Combine biscuit mix, butter, milk, extract and sugar to make the dough -- batter really -- and drop by tablespoons onto the peaches. Combine sugar and nutmeg and sprinkle over the top. Bake at 400 degrees F. for about 25 minutes, or until biscuit mix is brown.

1/2 cup butter (1 stick)
1 cup flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
1 cup milk
3 cups peeled and sliced fresh peaches, with their juices (fresh is best, but you CAN use unsugared frozen peaches and still get a decent Grandma's peach cobbler! Let the peaches thaw before you use them)

Preheat oven to 350°F. Put the butter in a 9x13-inch Pyrex baking dish and put the dish in the preheating oven. While the butter is melting, mix up the batter by combining the flour, baking powder, salt, sugar and milk.

When the butter is completely melted, remove the pan and pour the batter into the melted butter. Then, carefully spoon the peaches and juice evenly over the batter. Return dish to the oven and bake for 30 minutes. As the peach cobbler cooks, the batter will rise up and around the peaches. Makes 10 to 12 servings.
