Sugar free carrot cake
It is so difficult for someone needing to keep weight down or who is diabetic to find a sugar free carrot cake that doesn't have sweet ingredients in it. That also includes such additions as juices and raisins. Whether we choose to accept the facts or not, just because you don't use 'sugar' or 'honey' doesn't mean you're not adding sweets.
Diabetics have to live with the fact that starches are turned to sugar by the body. If you use white flour, especially bleached white flour, you are getting empty, almost nutritionally valueless 'food'. Plus, since you must account for this transitional sugar producer, any sugar free carrot cake made with white flour robs you of an alternative nutritionally valuable starch.
So we searched the world over and have come up with one really good sugar free carrot cake. It tastes good and is made with whole wheat flour! The recipe has appeared in several places on the internet, with variations, so we don't believe it to be copyrighted! Sincere apologies if it is somebody's 'baby', but not only does it use whole wheat flour instead of white flour, it uses kidney-cleaning cranberries as the fruit! Sugar Free Carrot Cake
2 cups whole wheat flour
1 t. baking powder
1 t. baking soda
1/4 t. salt
1 1/4 cups water
1 1/4 cups dried cranberries
1 cup raisins
1 t. cinnamon
1 t. ground ginger
1/2 t. ground cloves
1/2 t. ground nutmeg
1/2 cup carrot, shredded
1/2 cup chopped walnuts
1/3 cup frozen orange juice concentrate, thawed
Lightly oil a 9-inch spring-form pan and set aside. In a small bowl, sift together the flour, baking powder, baking soda, and salt, and set aside. In a small saucepan, combine the water, cranberries, raisins, cinnamon, ginger, cloves, and nutmeg. Bring to a boil, reduce heat, and simmer for 5 minutes.
In a large bowl, place the shredded carrots, pour the hot liquid mixture over the top, and allow to cool completely. Add the walnuts and orange juice concentrate to the carrot mixture and blend well. Add the dry ingredients to the wet ingredients and stir well to combine. Pour the batter into the prepared spring-form pan. Bake at 375 degrees for 45 minutes or until an inserted toothpick comes out clean. Serve this sugar free carrot cake plain or frost it. Enjoy!
