Banana Recipes

Here are some banana recipes for you. Some are probably old favorites of yours and some may be new. Maybe some are ones you have forgotten and will want to bring back to your table.

SMOOTHIES are very popular and make a great after-school treat or just a healthy snack at any time of the day. This is one of the banana recipes you will want to add to your recipe box. Using your blender or food processor, whip up this smooth and delicious drink.
2 medium-size, firm bananas
¾ c. plain yogurt (organic or soy)
1 (10 ounce) box partially thawed strawberries
Just put all the ingredients in the blender or food processor and blend until smooth.

HAWAIIAN BANANA BREAD
(So delicious and simple; add it to your banana recipes!)
 
1 c. vegetable shortening
2 c. sugar
6 ripe, mashed bananas
4 well-beaten eggs
21/2 c. unbleached all-purpose flour
1 tsp. Salt
2 tsp baking powder

Cream shortening and sugar well, beat in egg yolks and add bananas.
Add sifted dry ingredients, blending well but do not over mix.
Bake in two loaf pans, greased and floured, at 350 degrees for 45 to 50 minutes. Makes 2 one pound loaves. When loaves are warm not hot, pour the pineapple mixture on top of the bread. Try this topping on other banana recipes.

PINEAPPLE TOPPING

2 c. unsweetened, crushed pineapple
¼ c. dark brown sugar
2 T. butter or substitute

Bring all ingredients to a boil. Reduce heat and simmer about 3 minutes. A thinner topping can be made for banana recipes by adding water in small amounts until desired consistency is gotten.

BAKED BANANA MERINGUE
(One of the "good old days" banana recipes.)

6 bananas
½ c. sugar
1 tsp salt
4 t. lemon juice
2 T. melted butter or substitute
4 T. water
3 egg whites

Cut bananas in halves crosswise and lengthwise and make a layer of half of them in a baking dish; mix salt with sugar and sprinkle half of it over the bananas then half of the lemon juice and half of the butter (substitute). Add remaining ingredients in the same way. Pour on water and bake in a hot oven about 15 minutes. Make meringue of egg whites and spread over the baked bananas. Return to oven just long enough to lightly brown the meringue. Now you have one of the baked banana recipes to serve to your family.
