Fruit Pizza recipe
A fruit pizza recipe that is very good has as its pizza "crust" a lovely, large sugar cookie. Two good cookie recipes are included in this article. The baked cookie, after it has cooled, is lightly covered with an organic cream cheese. There are vegan cream cheeses that may be used, but the fruit will stay on the cookie without this addition.
The idea behind a fruit pizza recipe is to make it in the shape of a pizza. So you will need the right pans.
The toppings you can use on a fruit pizza recipe are limited only by what fruits are in season or by your own personal preferences. Bananas, sliced length-wise and spiraled around the cookie, interspersed with strawberry halves, drained mandarin oranges, thin slices of kiwifruit, peach and pear slices make a beautiful dessert! Some people like their fruit pizza recipe with slices of cantaloupe on it.
To keep fruit like bananas and pears from turning dark and to add pizzazz to your fruit pizza recipe, brush the fruit with a light glaze. Heating ½ c. orange, peach or apricot preserves with 1T of water makes a very simple and delicious glaze. Cool before using.
Fruit pizza recipe for Sugar Cookies:
2/3 c. vegetable shortening
3/4 c. sugar
1 egg or egg substitute
1/2 t. vanilla
2 c. unbleached all-purpose flour
1 1/2 t. baking powder
1/4 t salt
4 t. milk (organic) or soy milk
Cream shortening and sugar; add egg or egg substitute and beat until light and fluffy. Add vanilla and mix thoroughly. Have the dry ingredients sifted together and add to the batter along with the milk.
Chill the dough about an hour. This will make the fruit pizza recipe for dough easier to handle.
Divide dough in half, keeping one half chilled until ready to use. Roll the dough to 1/8-inch thick on wax paper, keeping in mind the round shape of the greased pizza pan you will be placing the dough on. Put the pizza pan on top of the rolled dough, slip your hand under the wax paper holding the dough and flip it over into the pan. Carefully remove the wax paper. Gently press or cut edges to fit the pan. Repeat with remaining dough for a second pizza.
Oven: 375 degrees for 10 to 12 minutes.
Fruit pizza recipe for Scotch Shortbread
1 c. organic butter or butter substitute
1/2 c. sugar
2 1/2 c. unbleached all-purpose flour
Cream the butter and gradually add sugar until the mixture is light and fluffy. Chill for an hour. Roll dough to ¼ inch-thick on wax paper that has been lightly dusted with flour. The dough may be divided in half for two medium fruit pizza recipe cookies. Place the ungreased pizza pan on top of the rolled dough, slip your hand under the wax paper, flip the dough over into the pan and remove the paper. Shape or cut the edges to fit the pan.
Oven: 300 degrees for 25 to 30 minutes or until very lightly browned.
