Tofu Recipes
Getting accustomed to tofu recipes can be a bit daunting for those who are trying to make their first meals using tofu. Just start with simple recipes that require very little preparation and then gradually take on more complicated tofu recipes, and then get really brave and start to create your own tofu recipes.
There are several kinds of tofu on the market, today. You don't even have to go the health food store, anymore, to find it. Tofu is available in almost any grocery store or market. Some markets even have tofu recipes printed on handouts for their customers.
The firm or extra-firm type of tofu is probably the easiest to handle for beginners. It has very little water content and the remaining moisture is easily removed by gently pressing the block of tofu between paper towels. Firm tofu is the best to use when making tofu recipes that require the tofu pieces to remain intact. It would be a good choice for stir-fry dishes.
One of the easiest tofu recipes to start with, is one for fake French Fries:
Use a one pound block of extra-firm tofu. Slice it length-wise into three pieces and gently press the pieces between layers of paper towels to remove the water. Then cut each piece into ½ inch strips. Put the strips on a cookie sheet that has been sprayed with a non-stick vegetable oil and slip under the broiler. Turn the strips as soon as they start to brown, about 2 minutes, and continue turning until all sides are brown and crisp. Remove from the broiler and enjoy with salt, pepper, ketchup, mustard, mayonnaise, or whatever you like on your fries.
This delicious salad is one of my favorite tofu recipes. Serve it cold, on leaves of your favorite lettuce.
1 package of extra-firm tofu, drained and chopped into small pieces
¼ cup diced celery
1 cup seedless green grapes cut into halves
¼ cup diced apple
¼ cup walnut or pecan pieces
¼ tsp. salt
¼ tsp. Alpine Pepper or white pepper
½ cup mayonnaise (or vegan substitute)
Mix together the mayonnaise, salt and Alpine Pepper or white pepper. Gently mix the chopped tofu with the celery, grapes, apples and nutmeats and fold into the dressing mix, until well coated. Chill several hours before serving.
