A vegan cake recipe
A vegan cake recipe you may wish to try is similar to Wacky Cake in that it doesn’t use any eggs or dairy products.
As you know, in order to get a “true” vegan cake recipe, not only must it not have eggs or dairy products, but no refined sugar can be used. For this recipe, Hain turbinado sugar is used. In case some of you have never tried baking with the sugars like turbinado, there are several things of which you should be aware.
As far as amounts to use in recipes, it’s identical to white sugar. But it isn’t white. The color resembles light brown sugar. The color comes from the coating of molasses on each grain which gives the sugar a distinct flavor. This flavor and color can’t be eliminated when making a vegan cake recipe. To put it in other words; no white cakes.
Vegan Cake Recipe
Sift together: 1 ½ cups of flour, 1 cup turbinado sugar, 1 ½ tsp. baking soda, ¼ tsp. salt. Add 1 scant cup of soy milk and ½ cup of vegetable oil. Mix the ingredients until a smooth batter is obtained and pour the batter into a greased 9” cake pan. Bake the cake at 375 degrees for 30 minutes or until the top is browned and the cake begins to pull away from the sides of the pan.
You can substitute other liquids for the soy milk when making this vegan cake recipe. By using ½ cup of lemon juice and ½ cup of water, you will get a delicious lemon cake. Or you might want to try orange juice, or apple juice. Plain water also works. The main thing to remember is to try and choose flavors that compliment the light molasses flavor of the sugar.
This recipe really makes a delicious cake. The turbinado sugar crystals make the browned top glisten and no icing is needed. My favorite is the lemon flavored cake. Having a pronounced sweet tooth, I do like icing. For the lemon flavored vegan cake recipe, I make a thick sweet lemon sauce and spoon it over individual servings of cake.
