Asparagus Recipes
Many asparagus recipes begin with cooked asparagus spears:
Cook asparagus in a very small amount of boiling, salted water with a lid covering the pot; Or, to cook uncovered, place in boiling, salted water that barely covers the spears. The time to cook will vary with the size and amounts you are cooking. Small amounts will be ready in approximately 7-10 minutes. Larger amounts will take 15-20 minutes to cook.
TANGY ASPARAGUS SALAD
1 lb. of cooked, chilled asparagus spears
3 tsp. finely minced fresh dillweed
3 tsp. finely minced fresh chives
1/2 c. yogurt (organic)
4 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
2 hard-boiled eggs, coarsely chopped
Combine the dillweed, chives, yogurt, mustard, salt and pepper and mix well. Place the asparagus on salad plates, add the dressing and top with the chopped eggs.
You will want to add this salad to your list of asparagus recipes.
ASPARAGUS WITH SEASHELL PASTA
3 c. cooked, small shell pasta
2 c. frozen asparagus tips and cuts
½ c. thinly sliced carrots
½ c. finely chopped onions
¼ c chopped red sweet pepper
1 t. oregano
½ t. celery seeds
½ c Italian salad dressing
Combine all ingredients, cover and chill about 8 hours or until ready to serve.
Asparagus recipes suggest serving this dish with crusty Italian bread.
FRESH ASPARAGUS TOSS
This is one of the asparagus recipes that may be served hot.
Wash one pound of fresh asparagus. Cut into ½ inch pieces, discarding the woody parts of the stems. Steam the asparagus pieces about 8 minutes, or until tender, but still crisp. Put the asparagus in a large bowl, drizzle with ½ c. lemon juice and then sprinkle on ¼ c. of Parmesan cheese. Cover the bowl and gently toss the ingredients until the asparagus is well coated.
STIR-FRY ASPARAGUS

1 lb. Fresh asparagus
1 T. peanut oil
¼ t. ground ginger
¼ t. black pepper
1 T. soy sauce
1/3 c. pistachios, coarsely chopped
Slice the asparagus spears diagonally, to 3" lengths, discarding the woody parts of the stems.
Heat the oil in the wok and add all the ingredients except the soy sauce and the pistachios.
Stir and fry over medium heat for 2 minutes. Add the soy sauce and continue stirring for 2 minutes longer. Remove from heat and stir in the pistachios.
