Twice baked potato recipes
It is a lot of work to make one of the twice baked potato recipes that are out there, but there is nothing better than a really good twice baked potato.
You can even make it like some of the convenience stores do: a meal in itself. All you need is that basic baked potato and garnishes to please your soul. One of my favorite twice baked potato recipes is: bake your potato in the oven or microwave until it is done. I guess we'd better get that done first.
My oven, set at 425ºF, bakes my potatoes in 40-45 minutes -- don't forget to pierce the skins a few times to let the steam escape. If I want to be quick about things and get to the twice baked potato recipes, I use potato nails. That decreases the time to about 30 minutes, again depending on the size of the potato. I squeeze mine and if they mush easily, they're done. Others pierce with a fork and if that goes in easily, they call it done. Experience is the best teacher.
In my microwave--and every one's is different--you can put a fork-pierced potato in a clean, dampened brown paper bag, cooking it on HIGH for 3 minutes. Turn it over, and cook another 3 minutes. Personally, my best twice baked potato recipes deserve a potato cooked in the oven for the crisp skin, if nothing else.
Regardless of how you get them cooked, remove them from the heat source, let them cool off for about 5 minutes, then cut them in half. Spoon out the center of the potatoes, leaving about 1/4 inch behind for stability. Mash the potato centers, adding butter, milk, sour cream, salt, pepper, or any combination of those. For my twice baked potato recipes, I almost always sprinkle some freshly snipped chives right into the mashed potato mixture.
Then you spoon this mixture back into the potato shells and sprinkle with shredded cheese. The twice baked potato recipes suggest baking (or microwaving) until the potatoes are again piping hot and the cheese melted.
But you can make a complete meal of your favorite twice baked potato recipes by topping it with sauteed onions, mushrooms, broccoli florets, bell peppers, salsa or anything else that you fancy. Experiment to your heart's content and enjoy the impossible to fail results!
