Cucumber Recipes
This cucumber recipe may be one of the most delicious you have ever tasted. If you like cucumbers, you owe it to yourself to try it and the other cucumber recipes given.
These cucumber recipes may not be suitable for the vegan.
Cucumber Recipe for Party Sandwiches
1 box of organic cream cheese.
1/2 Cup of organic, plain yogurt.
1 package of dry Italian seasoning mix.
Mix the three ingredients together, cover and refrigerate overnight.
Spread the cucumber mix on cocktail-sized slices of bread.
Top each open-faced sandwich with a thin slice of cucumber.
Sprinkle the face of each sandwich with celery seed or seasoned salt.
This cucumber recipe also works well as a dip.
You may use your own favorite selection of breads or crackers to serve these savory bites.

Another delicious dish to add to your list of cucumber recipes is this one for:
Cucumber Salad
Take two medium-sized tender cucumbers, remove the peel and cut in paper-thin slices.
1/2 cup sour cream (Vegan alternatives work just fine!)
2 tablespoons of lemon juice
1/2 teaspoon of salt
1/2 teaspoon of sugar
A dash of cayenne pepper
Combine all the ingredients and chill well. This will make about 4 servings.

Another of the cucumber recipes you may find helpful is one for freezing cucumbers.
This is a wonderful way to capture a bit of summertime flavor when the gray dark days of winter are beginning to become tedious.
Peel, seed and put the cucumbers through the food chopper. Pack in ice cube trays and freeze.
After the cubes are frozen, remove them from the trays and place in freezer bags.
Do not thaw the cubes! Just before serving, crush the cubes and toss into your salad.
